Egg Sandwich - Cafe Style

Try this savory breakfast sandwich to get your day off to a great start! The savory flavor will satisfy your taste buds while the protein will satisfy those morning hunger pangs and leave you feeling full for hours.

My daughter used to work at the cutest little cafe that made sandwiches with the freshest ingredients.  I tried my hand at replicating their morning special and I must say I did not disappoint myself.  I usually just have my eggs with kale and blueberries most weekday mornings but every once in awhile I add this deliciousness to my weekend morning…especially after a night of cocktails ; )

Recipe:

Ingredients:

2 thin slices of Ezekiel Bread (or whatever bread you love, just try to avoid the white kind)

2  large eggs

1 cup kale (I devein my kale then add some to a ziplock back and freeze it so I can use in smoothies, eggs and other recipes)

2 slices bacon of your choice

¼ cup sundried tomatoes

½ cup pea sprouts

½ avocado sliced

Salt and Pepper to taste

Hot Sauce optional of course

  1. Scramble your eggs and add the kale then whisk together with salt and pepper

  2. Toast the bread while cooking the eggs & bacon

  3. I cook the bacon in the microwave when I’m short on time, 2 slices usually takes about 3-4 minutes (I like mine extra crispy)

  4. Assemble the sandwich by adding the sliced avocado, sun dried tomatoes, bacon, the egg kale scramble & top with the pea shoots.  Add the hot sauce or not and enjoy!!


Add a side of fruit if you’d like, I’m a big blueberry fan because of the long list of benefits including the energy they provide, the natural dose of vitamin C, the antioxidants and they’ve been shown to reduce belly fat which, hello, sign me up!
